Irresistible tortilla wraps for the love of Paneer. You can make it with ready made tortillas or make allpurpose flour / whole wheat flour wrap to stuff the filling.
- For the tortilla wrap:
- 1/2 cup all purpose flour
- 2 cups whole wheat flour
- 1/4 cup lard / shortening ( saturated fat)
- 1/2 tsp baking powder
- Salt to taste
- 3/4 to 1 cup warm water
- For the filling:
- Paneer or cottage cheese cubed
- 2tsp red chilli powder
- 1tsp coriander powder
- 1tsp garlic powder
- 1tsp ginger-garlic paste
- 1/2tsp turmeric powder
- Salt to taste
- 1cup sliced onion
- 1/2 cup sliced bell peppers
- Garlic mayonnaise
In a large bowl, stir together the flour, baking powder and salt. Slowly add the lard/shortening which is kept in room temperature. Rub in the shortening with your finger tips until you get a flaky crumb like texture to your dough.
Slowly add the water and mix well until well incorporated. Transfer the dough onto a floured surface and knead until smooth. Cover the dough with a cling film and set it aside for an hour.
Divide the dough into many lemon sized balls. On a slightly floured surface, roll out the tortilla for desired thickness. Heat a pan and cook the tortillas on each side until lightly golden. Set the tortillas aside.
Take a small bowl and combine red chilli powder, ginger-garlic paste, turmeric, coriander powder,salt and garlic powder. Add a tbsp of water to make a paste and toss the paneer in and gently rub in the spice paste.
Heat a pan and add oil. Toss in the paneer and cook them under low flame until slightly crisp.
Place the tortilla on a plate and spread a good amount of garlic mayonnaise. Now place a small portion of paneer. Add the onion and bell pepper slices. Roll it up tightly. Wrap a tissue paper around and serve hot.
