Do you want to make your usual eggplant sinfully tasty? Then you should try this marinara recipe.Goes great with pasta or as a dip for your garlic breads.A perfect recipe for even a person who hates eggplants.
- 250g Spaghetti
- 1 medium sized eggplant
- 3 large tomatoes
- 4-5 cloves of garlic
- 1 sliced onion
- 2tsp paprika
- 1tsp ground black pepper
- 1tsp dried oregano
- 2tsp red chilli flakes
- Oil to shallow fry eggplants
- 2tbsp Olive oil
Cut the eggplants into slices and sprinkle some salt. Let it sit for couple of minutes. Now put the eggplants in a kitchen towel to remove any moisture. Shallow fry the eggplants until crisp and soft.
Boil the tomatoes for 6-7 minutes to make peeling easier. Drain the water and peel the skin. Chop them into fine pieces.
Meanwhile cook pasta in boiling water until just tender. Save some pasta water for the sauce before draining.
Heat oil in a non stick pan over medium heat. Add the chopped garlic followed by sliced onions. Now add the chopped tomatoes, paprika ,pepper and salt. Stir it well until the tomatoes break down into fine sauce. Add the dried oregano and red chilli flakes . Toss in the fried eggplants and little pasta water. Turn off the heat once you reach desired consistency.
Place a portion of cooked pasta on a plate and add a spoonful of sauce over. Grate the parmesan over before serving.
