A refreshing cake which looks very pretty and at the same time stands out for its simplicity. You can eat this freshly baked cake as it is or top it with ice cream or whipping cream for extra flavour.
- 1 cup strawberries - hulled
- 1 cup all purpose flour
- 1/2tsp baking powder
- 1/2tsp baking soda
- 50g or 1/4 cup unsalted butter
- 2/3 cup granulated sugar
- A pinch of salt
- 1 large egg
- 1tsp vanilla extract
Preheat the oven to 350°F. Combine butter and sugar in a bowl and beat them with a blender until fluffy. Beat in the egg and vanilla extract and whisk until smooth.
Now whisk all the dry ingredients together. Sieve them through a colander to remove any lumps.
Now gradually add the dry mixture to the wet mixture. Gently fold the mixture until smooth.
Grease a 9 inch round pan with butter and transfer the batter with the help of a spatula. Slice the strawberries and randomly arrange them on top of the batter. That is indeed a heavenly sight to look at. Now sprinkle 2tbsp granulated sugar. Bake the cake until lightly golden and a wooden pick inserted into the center comes out clean.
Let the cake cool, and then transfer it to wire rack and wait for 15 minutes. Gently invert it onto a plate.
